Amy Fortes grew up in Lockport New York, just outside of Buffalo. With a vast amount of farm land, dairy farms, and corn fields in the surrounding area, and incredibly cold winters with a lot of snow, seasonality was something she learned as a child. Shucking corn for dinner was an almost nightly thing in the summer nights.
With Jon’s travels around the country, he has grown to appreciate and recognize the importance of local cuisine and a strong commitment to farm-to-plate cuisine. Jon best describes his cuisine as an upscale southern style of preparing and presenting food.
